Scallion Pancake Breakfast Quesadilla

 

Backstory:

Late night snack creation from what I happened to have on hand.

Ingredients:

  • 1 scallion pancake, premade frozen

  • 1 egg

  • splash of water

  • 1 tbsp butter

  • 3 slices pepper jack cheese

  • salt and pepper to taste

Optional:

  • hot sauce

Method:

  1. Prepare scallion pancake per package instructions.

  2. Add egg, a splash of water, salt and pepper to a small mixing bowl.  Whisk egg until whites are fully incorporated.

  3. In a small non-stick pan over medium heat melt butter. Once the butter is melted add in the egg mixture.  Spread the egg evenly and thinly by tilting the pan.  As soon as the egg starts to set up place the scallion pancake onto the uncooked egg and allow it to rest there until the egg starts to puff under the pancake.  Flip the pancake and egg over so that the pancake is now on the pan and the egg is on top.  Add your cheese of choice to cover the egg edge to edge.

  4. Allow cheese to melt or help it along either with a kitchen torch or under a broiler.  Once the cheese is melted to your satisfaction fold the pancake in half down the centerline.  Remove to a waiting plate.

  5. Allow to rest briefly so as to not sear the skin from the inside of your mouth when you dig in. Serve as is or drizzle with your favorite hot sauce.
